1 head of cauliflower
1/2 clove of garlic
Cream cheese

Serves: 4


*On the stove, start boiling a pot of water (add salt to the water)

*Wash the head of cauliflower in water and then remove the stem so it calls apart into florets.

*Place the florets in the boiling water. Boil for 5-10 minutes (You’ll know it’s done when a fork goes through the floret easily).

*Dump the cauliflower in a strainer and let it sit to dry out for about 15 minutes (You want as much of the water off so your mash won’t be runny).

*Mince the clove of garlic while you’re waiting for your cauliflower to dry

*In a food processor (Or mixing bowl) place your cauliflower, minced garlic, 1Tbs cream cheese (start with this amount and add more if you want the consistency to be thicker), 1Tbs butter, salt and pepper and pulse (or use a hand mixer or big spoon to combine if using the mixing bowl).

*Taste and add whatever you need more of

I love making cauliflower mash because it’s a healthier option to regular mashed potatoes and it’s just a fun change up when cooking for friends and family. I love using cream cheese because I think it gives the mash some much needed creaminess and flavor.
